Sweet Potato and Turnip Mash
This dish is a fall tradition in my house. It’s a great, less candy-sweet alternative to the usual yam or sweet potato casserole. – Tara
Ingredients:
- 3 cups peeled, diced sweet potato
- 2 cups diced turnip
- 1 tablespoon vegetable oil
- 1/8 cup apple juice
- 2 tablespoons butter, melted
- 2 tablespoons maple syrup
- 1/4 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Directions
- Preheat oven to 350 degrees. Place sweet potato, turnip and vegetable oil in a 2 quart temp-tations® baking dish and toss to coat. Bake 35 minutes, stirring twice, until sweet potatoes are soft.
- Remove from oven and add remaining ingredients. Use a large fork or masher to mash until combined. Turnips will not fully mash; this is normal. Serve immediately.
Tara’s Tip: This recipe also works well with rutabagas or carrots.
