Sometimes you want a mac ‘n cheese recipe with a twist – something with a little kick, a couple of veggies, and little protein thrown in for good measure. In other words, something that will be a meal unto itself! Well, this Southwestern Mac ‘n Cheese recipe fits the bill.
- Substituted crumbled tortilla chips for the breadcrumbs
- Added 1/2 cup frozen corn kernels
- Added a package of pre-cooked southwestern seasoned chicken breast strips, chopped (you can find these near the lunch meats in your grocery store)
- And added a couple of chopped roma tomatoes
Featuring a cheese sauce made from butter, flour, Dijon mustard, milk, white Cheddar and cream cheese that gets whisked together and simmered on the stove, this is a dish with an extra creamy texture and delicious flavor. (And if you want to add even more spice, you could splash a few drops of hot sauce into the cheese sauce as it cooks.)
